There is likely more than one Pujols because he has more than one card in the set.

After searching on here there are six cards in this set with him on it. The one I got is number 547, which appears to be his base card. 
I could be wrong but I believe he's only on four base cards in the 2011 set.

It doesn't change anything though, the fact is there is more than one so there may have been one unlocked before but I think you have for sure unlocked another. Oops, You are right. I accidentally counted STL1 (team card) and NL1 (all star). I'm assuming those are not part of the embedded set, but I could be wrong.
Oh man would I love to have the Pujols/Votto/Dunn diamond embedded...
