i just bought a couple cases of cards and i was wondering does topps know what cards are in what packs due to the bar code? so do they know like when someone is going to pull a 2011 diamond card or a canary card?

I don't think that they do know things like that. Barcodes are all the same and only used to identify the product in a warehouse or retailers inventory. I could be wrong though but I think that it's all random and they have no way to know what cards went in a box. Plus, if they did do that, what would stop someone that works there from taking the big hits for themselves?
I agree with dallas_collector84. It is just for storage.
