There doesn't seem to be any way to sort by year in Organize.
However you can sort by year when using the price guide.

for any folder other than "all items", you can just click on "item description"

for all items, the easiest way to do this:

add all cards to a dummy folder (call it "all items 2" or whatever), then you can sort it in the new folder by clicking on the item description header

there are also ways to sort by price and other things, but that involves changing the web address manually
